How To Serve and Eat Caviar

Caviar is the king of appetizers and fortunately with advent of the American & European caviar selections , prices became more realistic. Some will still prefer the Caspian sea Caviar at any price. That is an individual decision.

Serving Caviar - Eating Caviar

There are two ways of serving Caviar :

1- In a special caviar caviar server/chiller , or if buying caviar in tin cans, by placing the container over ice in an appropriate bowl.

For accompaniments to the caviar , you have 2 choices:
- Crème Fraiche
- Blinis

You place the crème Fraiche in a bowl and place over ice to keep it from spoiling, and a platter of blinis which you can order or make .

2- Caviar Canapés with sliced white bread & butter

How To Prepare Caviar Canapés

Take the sliced bread and ;
- Cut the crust out
- Lightly toast the bread
- Lightly butter the bread
- Cut each slice diagonally into 4 pieces
- Place in a bread basket that is diagonally lined with large serviette to cover the toasted bread and keep it warm .

You can either use blinis with crème Fraiche or toasted bread and butter. Myself, I prefer the bread and butter method . It is easier to handle for a party.

Prepare the toast and place a small heap in the middle and dribble a drop of creme fraiche on it , or you can use very thinly sliced lemon rinds cut in small triangular pieces for garnish.

Tip: Caviar & Crème Fraiche spoil and should be served on ice.
Tip: Caspian Sea Caviar i.e Iranian, Russian and eastern European caviars are sold in tins and are not pasteurized , and should be consumed within 2-3 days from opening the container, should be refrigerated at all times, and served over ice .
Tip: Any tinned caviar leftovers should be moved from the tin unto a glass container to prevent oxidization.
Tip: Most of the American caviars and European caviars sold in glass jars are pasteurized and will last longer .
Tip: The best spoons for caviar are the ones made from mother of pearl.

Do not serve chopped onions or chopped boiled eggs with caviar. I am not sure where that concept ever originated from. I know American Airlines served caviar with onions & eggs in their first class cabins, maybe they did that to drown the fishy taste and flavor of cheap caviar.
Good caviar, should be savored without any interference .
